Creamy Celery Soup

For 4 servings

- 15gr butter
- 250gr celery
- 1l water
- 1-2dl cream
- bit of flour
- salt, pepper, lemon juice






Had this soup the first time in a very nice restaurant close to where I live with a very special person. Don’t know whether it stayed in my mind because of those facts, or whether it just tasted so incredibly nice. In anyway, I have tried it various times myself, and decided that this is the best way to do it. But find out for yourself. It’s really easy to do, and tastes just wonderful. Also, I always serve this soup in a small jar (yes for jam) which costs about SFr. 2.- in the store, and you can close the lid before serving. So the nice smell will evaporate when you open the lid.


Ok, first melt the butter in a medium pan, add the chopped celery and sprinkle with some flour. Then pour the boiling water over it and let it simmer for about 15min. Then season with some salt, pepper & lemon juice. Then mass with a hand blender, and add a bit of cream to taste, mass, and season with cream.

Wine recommendation: Would definitely go with a soft & light white wine, like a nice Soave or Riesling
